Elaine's Minestrone Soup:
Ingredients:
4 slices
bacon, chopped
1 medium
Onion, chopped
3 -4 TBSP
chopped Garlic (to taste)
5 Lg. boxes
Beef Broth (32 oz. box)
6 oz. can
Tomato Paste
Italian
Seasonings – cover the surface of soup – approx. 6-8 TBSPs.
2 cans
Cannellini Beans (Great Northern will work), rinsed and drained
2 cans Red
Kidney Beans, rinsed and drained
2 cans Mixed
Vegetables, rinsed and drained
2 medium
Zucchini, matchstick chopped
˝ cup Olive
Oil
8 oz. Small
Shell Pasta (half a reg. sized bag or box)
Bag of
Parmesan Cheese
Instructions:
Chop bacon, then put in large soup pot and cook until crisp. While bacon is cooking, chop onion and put into pot with bacon once the bacon is crispy. Add garlic at this time, too. When onion has cooked down a bit (to “clear”) add 5 boxes of beef broth, tomato paste, and Italian seasonings. Bring to rolling boil (good time to chop zucchini). Once the tomato paste has melted into the broth, add both sets of beans, and mixed veggies. Bring to rolling boil again and add olive oil, pasta and zucchini. Stir well, so pasta does not stick. Allow to boil on medium heat for 5 minutes less than instructions on pasta package. Turn off burner and let sit for 5 minutes. Serve with a drizzle of olive oil then sprinkle parmesan cheese on top.
